Take your Holiday goodies to the next level by creating infused versions. If you are new to edible cannabis, start low and go slow by ingesting only 2.5mg of THC. When you consume cannabis edibles, remember it can take up to 2 hours for them to take effect, they could last up to 12 hours and follow the laws about cannabis and driving.

Infused Turkey Gravy 

This recipe can be adapted using any meat drippings/fat you wish. It can also be made vegetarian using vegetable oil and vegetable instead of animal products.  

Ingredients: 

  • 1/4 cup fat skimmed from drippings  
  • 1 Tbsp. cannabis-infused butter 
  • 1/4 cup all-purpose flour
  • 2 cups liquid (juices from roasted turkey, broth, water)
  • 1/2 tsp. salt
  • 1/2 tsp. pepper 

Instructions: 

  1. Add reserved fat to a large saucepan.  
  2. Heat over medium heat until the fat is melted and hot. 
  3. Sprinkle the flour over the hot fat.
  4.  Using a wooden spoon, stir continuously until the fat and flour have formed a cohesive mixture.
  5. Continue stirring for 2 to 3 minutes until the mixture is slightly golden.  
  6. Whisk the hot meat drippings slowly into the flour mixture. 
  7. Keep whisking until the liquids are fully incorporated. 
  8. Simmer gravy and continue simmering until it reaches your desired consistency.
  9. Season with salt and pepper and 1 Tbsp. of cannabis-infused butter. 

Infused Gingerbread Cookies

Ingredients:

  • 1/2 c. butter, softened
  • ¼ c. cannabis-infused butter softened
  • 3/4 cup packed brown sugar
  • 2/3 cup molasses
  • 1 large egg
  • 1 tsp. pure vanilla extract
  • 3 1/4 cups all-purpose flour
  • 1 Tbsp. ground ginger
  • 1 tsp. baking soda
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground cloves
  • 1/4 tsp. ground nutmeg
  • 1/2 tsp. kosher salt
  • 2”-piece fresh ginger, grated (optional)
  • Zest of 1 orange (optional)
  • 1/2 tsp. finely ground black pepper (optional)
  • Sugar cookie icing for decorating
  • Sprinkles for decorating

Instructions:

  1. In a large bowl, using a hand mixer, beat butter, brown sugar, and molasses until fluffy, about 2 minutes. Add egg and vanilla and beat until combined.
  2. In a medium bowl, whisk flour, spices, baking soda, and salt until well combined. With the mixer on low, gradually add dry ingredients to wet ingredients and fresh ginger, orange zest, and black pepper (if using) until the dough comes together. (Do not overmix!)
  3. Divide the dough in half and create two discs. Wrap each in plastic wrap and chill in the refrigerator until firm, about 2 to 3 hours. (Otherwise, divide the dough in half and roll each piece of dough between two pieces of parchment to 1/4″ thick. Chill until firm).
  4. Preheat the oven to 350°F and line two large baking sheets with parchment paper. Place one disc of dough on a lightly floured counter or surface and roll until 1/4″ thick. (Alternatively, peel off both sheets of parchment from the dough, then replace one sheet of parchment back underneath the dough.) Cut out gingerbread men with a 3″ wide cutter and transfer to baking sheets.

Infused Old-Fashioned Hot Chocolate 

Ingredients: 

  • 1 1⁄2 cups whole milk 
  • 2 1⁄4 tsp. cornstarch 
  • 1 pinch salt 
  • 1 tsp. vanilla
  • pinch chili powder or 1 pinch cayenne, for mystery 
  • 4 Tbsp. skim milk 
  • 4 semi-sweet chocolate baking squares, grated or 9 Tbsp. dark cocoa 
  • 1 Tbsp. cannabis infused unsalted butter 
  • sugar, to taste 

Options: 

  • 1 to 2 tsp. of a sweet liqueur, adding the vanilla (such as dark rum or Grand Marnier) (optional). 
  • 2 Tbsp. ginger syrup (optional). 
  • unsweetened whipped cream (optional) or lightly sweetened whipped cream as a garnish (optional). 

Instructions:

If Using Chocolate: 

  1. Grate chocolate (manually or in a food processor fitted with steel blades). 
  2. Add in corn starch, sugar, and salt. 

If Using Cocoa: 

  1. Mix solid ingredients, cannabis-infused butter, and a little warmed milk to make a smooth paste; add remaining milk.
  2. In a one-quart, heavy-bottomed, non-aluminum saucepan, heat milk over medium-low heat, often stirring with a small whisk, until it is steaming hot, be careful not to boil. Carefully add chocolate mixture.
  3. Continue cooking mixture, stirring almost constantly with a whisk, and frequently scraping the bottom and sides of the pot with a heat-resistant spatula. Mixture will steam for several minutes (15 to 20) before coming to a boil and will thicken slightly.
  4. When the mixture boils, continue cooking and stirring for only 30 to 45 seconds. 
  5. Remove from heat; whisk in vanilla, sugar (as much as you want), and any optional ingredients. 

To Serve: 

  • Separate among small 4 cups or mugs and mix 1 tablespoon of skim milk in each mug to achieve desired consistency; you may need to warm in the microwave once skim is added.
